(Otherwise referred to as Pinto Beans)
One Pound of Pinto Beans
(Cranberry beans may be used as well, or mixed beans)
Ham Pieces or Fat Back
Salt
Pepper
Put water into dutch oven or large pot. Heat water until boiling.
Sort through beans and discard any "bad" beans, or small pebbles that
may have found their way into the bag.
Rinse the beans well before pouring into pot.
Bring water and beans to a boil, adding ham pieces,
or fat back. Reduce heat and cover. Simmer for several hours
usually around 4 hours, stir often.
Serve with a pone of homemade pone of corn bread and
bread and butter pickles, pickled beets or chow chow.
