Prune Cake

It's Really, Really Good!

 

1 1/2 cups sugar

2 eggs

3 cups flour

1 1/2 teaspoons cinnamon

1 1/3 cups cooked prunes

1 1/1 cups buttermilk

2 1/2 teaspoon soda

3/4 teaspoon cloves

 

Mix well.  Bake at 350 degrees until done.

 

There are two toppings that are delicious for this cake.

 

Pineapple Topping

(This topping comes from Kentucky)

1/2 cup sugar

1 can crushed pineapple

1/4 cup corn starch

Mix well and pour over cake.

 

Buttermilk Sauce

This is my personal favorite topping.  Cook it in a cast iron skillet...it's so good.  You might double the recipe. I do.  I always like to have some on hand for later.  It's also great on ice cream or a vanilla or pound cake. Yum!

1/2 cup buttermilk

1/4 cup butter

1/2 teaspoons soda

1 1/2 cups sugar

2 teaspoons vanilla

Boil first four ingredients for one minute stirring constantly.  I like to cook it for a while until the mixture thickens but not quite to soft ball stage.  Remove from heat and stir in the vanilla.  Pour over cake while warm.  Delicious!
